Who said you could not make a banana for breakfast? Not this girl. I say it's totally legitimate.

To make a banana breakfast, simply swap the ice cream with yogurt and exchange the chocolate sauce for a fruity sauce made from blueberries and fresh strawberries. It's one of those things that I think I can eat at breakfast or even for dessert. Who does not like having a dessert for breakfast? I love this split banana breakfast because it is so simple to make and I love cold yoghurt with fresh and cold fruit. It will not weigh you down.


Feel free to go crazy with the toppings. Any yogurt will do the trick, you can use nuts or almonds, and any fruit filling will work! If you plan to have breakfast quickly, you can make the sauce the day before and keep it in your fridge for the week!

INGREDIENTS:

For the blueberry sauce:

1/2 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1/3 cup of sugar
1/3 cup of water
For the banana crack:

1 medium banana, peeled and sliced ​​lengthwise
1 cup simple Greek yogurt
1/4 cup shelled walnuts, toasted
blueberry and strawberry sauce
fresh fruit, sliced


DIRECTIONS:

For the blueberry sauce:

Mix the sugar and water in a small saucepan. Heat over medium heat. Stir in blueberries and strawberries and mix well. Bring the mixture to a light boil and simmer for about 5 minutes. Remove from heat and let cool.
Pour the mixture into a food processor (or blender), puree smooth. This will give you more sauce than it takes for a banana crack, but I like to keep the remaining sauce in the fridge so I can use it again once.

For the banana crack:

Arrange the banana slices on a plate. Scoop the yogurt on the bananas. Sprinkle with a little blueberry and strawberry sauce. Sprinkle the walnuts and some sliced ​​fruit and serve!
