VEGAN DONUTS WITH CHOCOLATE GLAZE
These veggie donuts with chocolate and hazelnut icing are pure decadence! But they are baked, so, very mellow and without oil! Have some of these goodies!
In fact, I've never been a big fan of donuts before becoming vegan. I would always take muffins and cookies on donuts at any time. Mainly because I do not like it, many are very nice. But now that I've tried so many new things in the past two months, I've wondered why not just try vegan donuts. So I ended up with these delicious donuts with chocolate icing and hazelnuts.
Granted, it's a bit harder to eat donuts as a vegan, but you can do it. The only thing that is actually more difficult as a vegan, is to buy donuts purchased in stores. Store donuts contain mainly milk, eggs and butter. In addition, chocolate icing often contains butter.
Is the VEGAN DONUTS GOOD FOR YOU?
Yes, certainly better than ordinary donuts! Because they contain no eggs or dairy products, they contain neither cholesterol nor saturated fats. In addition, you usually make homemade veggie donuts and do not fry them. Therefore, are generally lower in fat.
It's probably hard to believe, but I used red beans for the donut dough. At first, I was very skeptical about cooking with beans. But when my black bean brownies turned out so delicious and so wet a few weeks ago, I thought I really had to use beans for other baked goods.
However, I also added a cup of whole wheat flour this time. Vegan donuts are not gluten-free, but it's easy to change recipes.
People would probably never guess that there are beans in these vegan donuts, they are so chocolaty and delicious !! I prepared them for my family a few days ago and everyone loved them! I tell you they left so quickly!
HOW TO MAKE THESE VEGAN DONATIONS
I bought a special baking sheet for donuts a few weeks ago and I like the ease with which it is compared to frying donuts.
Start by placing the drained kidney beans in a blender with the brown sugar, almond milk and cocoa, then stir until the mixture is smooth.
Then transfer to a medium bowl and stir in whole wheat flour, baking powder and vanilla. Spray some cooking mix on the donut pan or grease it with vegan butter such as Earth Balance.
Then use a spoon to fill each donut or fill the dough in a Ziploc bag and cut one edge.
Preheat the oven to 350 degrees and cook the chocolate and hazelnut vegan donuts for 9 to 11 minutes.
Let cool in the pan for a few minutes, then place them on a rack.
Meanwhile, prepare the chocolate icing. Melt a 3.5 ounce vegan dark chocolate, using a microwave, or place the chocolate in a heat-resistant bowl and place it over a simmering pot of water.
Once melted, cover the donuts with the chocolate and sprinkle with brittle hazelnut. I have used store bought treats, but of course you can also add them with chopped hazelnuts if you wish. Or use other decorations such as sugar nuggets or coconut flakes.

- 1 15 oz can kidney beans
- 1 cup almond milk
- 1 tablespoon vanilla extract
- 1/2 cup brown sugar
- 1 cup cocoa powder
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 3.5 oz package vegan dark chocolate
- 4 tablespoons hazelnut brittle You can also sub it with chopped hazelnuts, or use sugar sprinkles or coconut flakes instead
- Rinse and drain the kidney beans. Place them into a blender together with the brown sugar, almond milk, and cacao and blend until the mixture is smooth.
- Then transfer it to a medium bowl and stir in the whole-wheat flour, the baking powder, and vanilla. Spray the donut pan with cooking spray or grease it with vegan butter such as Earth Balance.
- Either use a spoon to fill each donut or fill the batter into a Ziploc bag and cut off one edge.
- Preheat the oven to 350 °F and bake the vegan chocolate hazelnut donuts for 9-11 minutes. Allow to cool down in the pan for a couple of minutes, then move them to a cooling rack.
- In the meantime, make the chocolate glaze. Melt a 3.5-ounce package vegan dark chocolate either by using a microwave or place the chocolate into a heatproof bowl and place it over a pan of barely simmering water. Once melted, cover the donuts with the chocolate and sprinkle with hazelnut brittle.
